Quick Girl Scout Cheesecake

So you guys all know that I get lazy and take the easy way out too often. And well.. this is no exception.

There is a brand called Wind & Willow and they make these awesome dip and cheeseball mixes. I fell in love with them when I worked at a kitchen shop a few years ago.

So I had the idea to take their White Chocolate Amaretto Cheeseball mix and make a Caramel deLite Girl Scout cookie cheesecake.
 
I used the recipe for the cheesecake on the back of the Wind & Willow box (Their mix, 8oz cream cheese, 8oz whipped topping)
and then I added in 6 cookies. The mixer crushed the cookies but if you are mixing by hand then I suggest you pulverize them inside of a baggie first.


For the crust I used graham cracker crumbs, 6 cookies, 1/3 cup butter, 1/4 cup brown sugar. Baked at 350 for 10 minutes. You may want to bake it maybe 8 minutes depending on your stove. 


I let them chill over night but it would've probably only taken 2 hours or so to chill. 


 
I used four 6" springform pans
The almond topping came with the Wind & Willow Mix
 
Crust
1 1/4 cup graham cracker crumbs
1/3 cup butter
1/4 cup brown sugar or white sugar (it will change the taste)
6 Caramel deLite Girl Scout cookies (crushed)
 
Mix and Bake at 350 for 8-10 minutes. Cool.
 
Cheesecake
1 box Wind & Willow White Chocolate Amaretto cheeseball mix
8 oz cream cheese
8 oz whipped topping
6 Caramel deLite cookies (crushed)
 
Mix. Spoon on top of crust and let chill until ready to serve.
 
Really easy and really yummy!!!
